    Hi Ian, I'd recommend you assign a pair of dials for Levels; one for Adjustments > Adjustment Layer > Highlights Input (Levels), and one for Adjustments > Adjustment Layer > Shadows Input (Levels).

    This will automatically create or select a levels adjustment layer above your presently selected layer in Photoshop; no need to press the dial to create it. A dial press will instead reset the corresponding value to 0 (blacks) or 255 (whites).

    I would strongly recommend against trying to adapt a left turn to the white point and right turn to the black point. This will make it impossible to increase the white point if you decrease it too far, or vice-versa for the black point.
